Hong Yun is another black tea variety developed by the Taiwan Tea Experiment Station (TTES), and is characterized by citrus and floral flavors. This direct trade offering comes from Mr. Kang, in Yuchi Township, near Sun-Moon Lake.

Using only bio-farming methods, his small tea garden lies tucked away on a forested slope, where the tea bushes are left to grow naturally. Because there are no pesticides or fertilizers of any kind used, Mr. Kang's production is often limited. The result, however, is a few choice teas of unmatched purity, flavor, and terroir-specific character.

What we're doing:

  • 1 heaping tablespoon (about 3 grams) of Hong Yun per 6-8 oz serving
  • Heat fresh water to 195º-205ºF
  • Steep 3-5 minutes
  • Multiple infusions
