Like Rooibos, Honeybush is native to South Africa, where it grows in the country’s Cederberg district. The method of its production is similar to that of black tea, and takes three to five days to complete, resulting in a delicious caffeine-free tisane that’s been enjoyed since at least the seventeenth century. Unsurprisingly, Honeybush features a light honeylike character, which is enhanced with the addition of...you guessed it, honey!  

 What we’re doing:

  • 1 heaping teaspoon (about 3 grams) of Honeybush per 6-8 oz serving
  • Heat water to 212ºF (boil)
  • Steep 5-7 minutes

 What we’re tasting:

  • Sweet - Light honey
  • Fruity - Apricot jam
