Tieguanyin, quite possibly the most well known oolong in the world, comes from Anxi county in Fujian province. This tea typifies the characteristic floral and sweet aromas and flavors frequently found in lightly oxidized oolongs. The name translates to “Iron Goddess of Mercy” and is named after Guanyin, the Chinese goddess of mercy, and a female embodiment of Avalokitesvara, a Bodhisattva in Buddhism.

One legend about this tea’s origin involves a poor tea farmer named Wei. Every day as he walked to his tea field, Wei would pass a crumbling temple dedicated to Guanyin. Deciding he must do something, Wei began sweeping the temple floors and offering incense twice a month. After doing this month after month, Guanyin came to him in a dream and told him to seek out a treasure housed within a cave behind the temple. When he went to the cave, Wei found a tea shoot. He took the shoot and planted it in his field and grew it into a full, healthy bush. He gave clippings to his neighbors, and soon the entire village prospered thanks to the production of this exquisite tea. 

What we’re doing:

  • 1 heaping teaspoon (about 3 grams) of Tieguanyin per 6-8 oz serving
  • Heat fresh water to 180º-195ºF
  • Steep 2-4 minutes
  • Multiple infusions
