The home of Baozhong production is Pinglin Township, located just outside of Taipei. Here, the tea plants that are used specifically for producing Baozhong are tended to carefully all year in preparation for spring harvesting. During the first three weeks of April, when conditions are right, Pinglin suddenly becomes a beehive of activity in order to reap the most they can out of this short production period.
The result of all this care and hard work? A tea celebrated for its flower and melon aromas, sweet taste, and light astringency.
What we’re doing:
- 1 heaping tablespoon (about 3 grams) of Baozhong per 6-8 oz serving
- Heat fresh water to 180º-195ºF
- Steep 1-4 minutes
- Multiple infusions
